The acronym FASS (Fat, Acid, Sugar + Salt) is all you need to remember to whip up a great salad dressing at home with the ingredients you already have on hand. Because our greens at Imagine Farms are indoor grown (cooler temps make sweeter, crispier greens) and distributed within days of harvest, they are flavorful! Instead of loading on goopy store-bought bottled dressing, dress your salad greens lightly with a balanced combo to bring out the flavor and maintain the texture. It’s easy to create a balanced complement to fresh leafy greens by layering in a combination of fat, acid, sugar & salt. Here are some suggestions to make dressings at home and some of our favorite salad dressing recipes if you want a more specific guide.
Fat: Olive Oil, Sesame Oil, Avocado Oil, Avocado, or Tahini
Acid: VInegar (ACV, Red Wine, Balsamic, Champagne) or Citrus
Sugar: Honey, Agave, or Coconut Sugar
Salt: Himalayan Pink Salt or Sea Salt
These recipes are easy to make, yielding about one cup of dressing - great for a half dozen salads or so but not too much that it spoils in your fridge.
Store these in a wide-mouth mason jar for 2-3 weeks. Each recipe is easy to make using the ‘shake method’ with the exception of Sesame Dressing with a few extra steps. Simply add ingredients into a wide mouth jar, shake, serve, and store all in the same reusable container.
Classic Italian
½ cup Red Wine Vinegar
1 ½ cups Olive Oil
1 ½ tsp. Honey
1 ½ tsp. Black Pepper
1 ½ tsp. Sea Salt
1 tsp. Italian Herb Seasoning
1 tsp. Dijon Mustard
1 clove Garlic (minced)
Place all ingredients in a jar and shake!
Classic Greek
2 tbsp Red Wine Vinegar
2 tbsp Lemon Juice
1 clove Garlic (minced)
½ tsp. Oregano
½ tsp. Sea Salt
¼ tsp. Black Pepper
½ cup Olive Oil
Place all ingredients in a jar and shake!
Watercress Dressing
2 tbsp. Dijon Mustard
1 tbsp. Red Wine Vinegar
½ clove Garlic (minced)
¼ cup Olive Oil
½ tsp. Honey
Salt and pepper to taste
Place all ingredients in a jar and shake!
Sesame Dressing
3 tbsp. White Sesame Seeds
2 tbsp. Rice Vinegar
1 tbsp. Soy Sauce
2 tsp. Brown Sugar
1 tsp. Sesame Oil
Toast sesame seeds in a frying pan over low heat - remove once 2 or 3 seeds start popping. Grind toasted sesame seeds in a mortar and pestle. Transfer to a jar, add remaining ingredients, and shake!
Honey Mustard Balsamic Vinaigrette
⅓ cup Balsamic Vinegar
½ cup Olive Oil
2 tbsp. Dijon Mustard
1 tbsp. Honey
Salt and pepper to taste
Place all ingredients in a jar and shake!
Market Dressing
¼ cup Apple Cider Vinegar
⅓ cup Olive Oil
1 tbsp. Honey
1 tbsp. Lemon Juice
1 tbsp. Dijon Mustard
Salt and pepper to taste
Place all ingredients in a jar and shake!
Maple Tahini Vinaigrette
½ cup Olive Oil
¼ cup Tahini
½ cup Lemon Juice
3 tbsp. White Vinegar
1 tbsp Maple Syrup
1 tsp. Dried Parsley
¾ tsp. Sea Salt
¼ tsp Garlic powder
¼ tsp. Cayenne pepper
¼ tsp. Black Pepper
Place all ingredients in a jar and shake!
